The Crispers restaurant chain's goal for remodeling all 29 stores is nearing completion, but the Lakeland-based company has yet to go full bore with an expanded menu beyond the soup-salad-sandwich concept. Under new owners Healthy Food Concepts LLC, the Florida chain of fast-casual eateries has been experimenting with breakfast and small-plate fare in various locations. To date, only one store in The Villages near Ocala offers breakfast, and stores in Davenport, Brandon, Trinity and Tallahassee offer the slightly upscale menu featuring items like Thai chicken skewers and hot crab and artichoke dip. "It's been received well," said Lisa Hofstetter, Crispers marketing manager. "We're still just really testing it out." Crispers officials had indicated in January that most stores would offer an expanded menu by year's end.
