PORTSMOUTH What exactly is molecular mixology?

Hit Surf Restaurant and Surf Sushi Bar this week to find out as the Spirit of the Seacoast Cocktail Week begins Tuesday, May 7 and leads up to the Portsmouth Hit the Decks Celebration on Friday, May 10.

The special weeklong event focuses on emerging trends in craft spirits and craft cocktails. Molecular mixology transforms alcohol into different forms, and taking on unique flavors, much like the trend of molecular gastronomy.

On Tuesday, mixologists at Surf Sushi Bar will don lab coats and infuse science with mixology, transforming your White Russian into a White Siberian, a frozen foam version of a 1980s cocktail using liquid nitrogen. Gin and tonics will be transformed into a cube using spherification, and your Manhattan will be transformed into a breakfast cocktail with flavors of maple and bacon.

On Wednesday, May 8, sake flights will be offered to experience the different classifications of premium sakes. Learn about the different methods used in sake production from the basic futsu, to the unfiltered nigori style and a sparkling sake. The second flight will take you up the sake classifications from junmai, to junmai gingo, to junmai daigingo.

Thursday is Local Craft Spirits Night. A celebration of the quality artisanal spirits being created locally. The trend of local craft spirits is on the same rise local craft beer was five years ago. New distilleries are popping up all over the country and New England is home to some of the pioneers in the industry.

Distillers from New Hampshire's two craft distilleries, Flag Hill Winery & Distillery in Lee and Sea Hagg Distillery in North Hampton, will be on hand to answer questions and educate you about how spirits are being made here in the Granite State.

The owners/distillers from Bully Boy Distillery in Boston, and representatives from the Berkshire Mountain Distillery in Great Barrington, Mass., will also be available for tableside banter and to enhance your knowledge of the local craft spirit movement.
